Actually, excercise is one of the things we DO see her do in the anime.
whenb she isn't gobblng food or reading (o.k... sometimes when
she's reading as well) shes wearing those short shorts of hers and working
out....
 usually her thighs.
 She could probably crack a man's head like Marlon Brando cracks walnuts
in "the Godfather"
 ... and strangely, she's aleays wearing these off the shoulder loose tops
and short-shorts in front of Ranma.
 Is this because she see's him as a non-threatening male figure?
 as "one of the girls?"
as nobody at all?
I can't see Kasumi in a thongbecause it's "Just Ranam."

 I think Nabiki may have an ulterior motive....you could argue that these
are thiungs she feels comfortable wearing and just wears them around the
house. Her felling able to wear them around Ranma is a sign of respect.
I say doing the splits in those shorts has got to be uncomfortable and
there is a darker reason.

After reading yet another Ranma Graphic Novel where we see Nabiki
do nothing but eat, it has occured to me that almost all 'future'
Ranma 1/2 fics picture her as keeping herself fit, trim, etc.  I
dunno, we've rarely seen her exercise...

Sean, Nabiki gets a lot of exercise...  You think it's easy having her 
mind run fast enough to manipulate everyone in the series subtly enough 
that they don't even know that she is the true power behind the series? 
 Give her some credit.

Besides, you know that she has to walk 10 miles, up hill, both ways, 
barefoot, in twenty feet of snow, backwards, on her hands and knees, 
carring 16 tons, just to get to school...  That has to work off some of 
it... And then handing the 16 tons off on someone is pretty hard work... 
 But then they load it, and Nabiki gets richer.  (Why?  You load 16 
tons, and what do you get?  Another day older and deeper in debt.  St. 
Peter don't you call me cause I can't go.  I owe my soul to Nabiki 
Tendo.)

And let's not forget all the jockeying she does...  Have you ever seen a 
fat jockey?  I didn't think so...
